Paneer Tikka
Paneer Tikka is an Indian dish made by skewering paneer cheese which has been
marinated in yoghurt and spices. Traditionally done in a tandoor, you get the
same effect by grilling these bad boys, along with some red peppers.
The marinade is crucial here, so don't skip on allowing the paneer to soak up
all those gorgeous, fragrant flavours. Don't forget to wet your skewers, too.
Soaking them stops them burning when cooking. Serve with pilau rice and homemade
naan, and you've got yourself an Indian feast!

INGREDIENTS
500 g paneer, cut into 3 cm cubes (about 1 inch)
3 red peppers, cut into 3cm square pieces
1 tbsp. lime juice
1 tsp. ginger, peeled and finely grated
1 clove garlic, crushed
1/2 tsp. ground cumin
1/2 tsp. paprika
2 tomato puree
Ground black pepper
1/4 tsp. turmeric
3 tbsp. Greek Yoghurt
4 wooden skewers, soaked for 15min in water (to stop burning)
Pilau rice and naan to serve
DIRECTIONS
Combine all marinade ingredients in a bowl (everything except paneer and red
pepper). Mix together well, then add paneer and coat evenly. Refrigerate for
minimum of 4 hours but ideally overnight.
To cook, preheat the grill to highest setting. Thread the paneer and peppers
onto soaked wooden skewers and brush with oil. Put the skewers on a shallow
baking tray and grill for approx 6 minutes each side until browned and cooked
through.
